Add the chicken pieces and stir fry for 7-8 minutes or until the pieces are firm.Drain the chicken pieces.(Optional Step) </li><br /><li><span style="font-weight: bold;">CHICKEN MASALA</span>:Add a little bit more oil if required.Then add 2/3rd of the sliced onions and saute till transparent. Then add the chopped tomatoes and poppy-chilies-ginger-garlic paste and stir fry for 5-6 minutes till oil seperates. Add the curd and stir well . Add the fried chicken pieces along with lime juice.Stir , cover and continue cooking.When the chiken is almost done , add the chopped coriander , chopped mint and curry leaves along with biryani masala.Mix and continue cooking till the chicken is dry. </li><br /><li><span style="font-weight: bold;">RICE</span>: Meanwhile , take another pot and heat some ghee.Adding ghee at this step is very important.Add rice and saute it for about 5 minutes on low flame till rice is tanslucent.Then add little less than double the quantity (7.5 cups) of hot water with salt and cook till rice is almost done and water is all absorbed.(Lime juice , bay leaves,1/2 tsp biryani masala , tumeric powder for color etc can be added to the water while cooking rice) </li><br /><li>While the rice is cooking , heat some oil in a pan and deep fry the rest of the onion slices to dark brown and crispy. </li><br /><li><span style="font-weight: bold;">LAYERING </span>:Now take an oven proof vessel.Spread 1/3rd of the rice at the bottom of the pan.Sprinkle fried onions , saffron water , rose water , raisins and nuts.Then spread 1/2 of the chicken .Repeat this layering , till you get 3 layers of rice and 2 layers of chicken. Cook, until just defrosted, but still crisp. Transfer contents of the skillet to a large bowl. </li><br /><li>Heat 2 tbsp of oil in the same pan.Add the eggs and season with salt and pepper. Cook in a skillet and set aside as scrambled. </li><br /><li>In a small bowl , mix together fish sauce , soya sauce , tamarind pulp , rice wine vinegar and salt . Mix till sugar dissolves and set aside. </li><br /><li>Use a large wok . If you dont have one use a nice size pot . Heat some oil in the wok and add the shrimp and garlic . Stir fry till shrimp is halfway done and then add the paprika , cayenne pepper and dry chillies . Use the spices according to your taste. </li><br /><li>Then add the noodles and sauce mixture and toss well. Then add the sprouts , tofu , peanuts , spring onions and toss well. </li><br /><li>When the shrimp is cooked and all the ingredients are heated through , remove from heat . Beat until creamy and set aside </li><br /><li>For chocolate batter , sift together all the dry ingredients to a large bowl(flour , sugar , cocoa powder , baking soda and salt). </li><br /><li>In another small bowl mix all the wet ingredients well (water , oil ,vinegar and vanilla). Make a well , in the middle of the dry ingredients and pour the wet ingredients into the well . Mix well using a wooden spatula . </li><br /><li>Pour the chocolate batter into the muffin tins , half filled . Then add the chopped onions , ginger garlic paste and green chilly. Stir fry till onions are soft . Then add all the vegetables with 1/2 tsp salt and pepper . Stir fry for 3-4 minutes . </li><br /><li>Now add the liquid , which is 3 cups stock(or plain water) and 1 cup milk.Stir well ; Cover and bring to a boil.Then lower the heat and simmer for 30-45 minutes or till vegetables are tender. </li><br /><li>Now take the bay leaves out . Add the gingergarlic paste , chilli powder , coriander powder , turmeric powder , black pepper powder , lime juice , spice powder,curry leaves and salt to the pork.Mix well and pressure cook till the pork is almost done.[If you have excess water along with the cooked pork in the pressure cooker , continue to simmer till pork is almost dry] </li><br /><li>Heat 2 tbsp oil in a pan and saute the onions till they are well browned . You have to keep stirring the onions on medium heat till they are evenly browned. Then add the urd dal , channa dal , cumin seeds , minced garlic , curry leaves and stir well till dals are browned. </li><br /><li>Add the onions and saute till they are soft . After that add the carrot and spinach.Cook till the vegetables are done and then add the powdered masala. </li><br /><li>Finally add the rice and lime juice. Mix gently .Garnish with nuts roasted in ghee and serve hot with raita. </li></ol></span>Lessons Learned<br /><br /><span style=";font-family:Trebuchet MS;font-size:85%;" >[1]The rice is bit spicy. Most of the time when i buy those wax coated root from the market , I will have to throw away half of it .So these days I rely on frozen tapioca (yucca root) bags. Thaw about one kilogram tapioca or yucca root .</li><li>Bring a large pot of water to boil.Dice the tapioca and add to the pot with tumeric powder and a generous amount of salt.Drain and mash it well using a wooden spoon .</li><li>Heat the oil in a pan.Splutter mustard and add shallots and saute till they are brown.Add dry chillies and curry leaves . Finally add the cooked tapioca into the seasonings and mix well . Christmas carols , visting relatives , Christmas vacation , gifts and above all the baked goodies makes the season special.The memories surrounding christmas never faded for me ; so i try my level best to make this season special for my kids.when i think of baking , the first thing that comes to my mind are those decorated sugar cookies.It might not be the best tasting cookies for grown-ups but these tiny treats which are covered with colored icings , chocolate or just sprinkles will capture any little heart.<br /><br />Here are some helpful tips for making sugar cookies<br />[1]Always chill the dough before rolling them out for a good 1 to 2 hours.<br />[2]Set a timer while baking cookies . The cookies will be done in no time and better safe than sorry.<br />[3]Try to buy plastic cookie cutters as the metal ones tends to get distorted . They gets rusted easily too.<br />[4]Measure flour very correctly. Take flour into the dry measuring cup using a spoon and then level the flour using a table knife.<br />[5]Use powdered sugar instead of flour while rolling the dough out<br />[6]Once the cookies are done , let it cook down completely before taking off the baking sheet .<br /><br />Sugar cookies can be drop , crackle , icebox cookies , cutout cookies etc . Then add the 3 tbsp milk gradually and bring the flour to a soft dough.Cover and chill the dough in refrigerator for an hour. </li><br /><li>Take half of the dough and roll out to about 1/4th inch thickness on a floured board . Use powdered sugar for dusting the board and rolling pin instead of regular flour. </li><br /><li>Cut out shapes using cookie cutters , put on an ungreased cookie sheet. </li><br /><li>Bake for about 5-7 minutes in a 400 degree F oven.Remove the cookies as soon as you see the bottom starting to brown.Cool the cookies completely. </li><br /><li>Decorate using sprinkles or frost using royal icing.</li></ol></span>Deepahttp://www.blogger.com/profile/09200666237260648093noreply@blogger.com0
